CHINESE CHICKEN NOODLE SOUP
1 chicken thigh
200 grams noodles (sweet potato noodles)
3 tablespoons cooking oil (peanut oil or other)
2 tablespoon ginger
6 cloves garlic
1 small carrot sliced
1 1/2 litres water (6 cups)
Salt to taste
Soak noodles in cold water for 30 minutes. This is for sweet potato noodles in this recipe. Other types of noodles may require different prepartion.
Set Instant Pot on “saute” setting on high heat. Add cooking oil. Add ginger, garlic and carrots. Stir fry for 1 to 2 minutes. Add
chicken thigh and sear on both sides. Total saute time: 10 to 20 minutes.
Add water to make the broth.
Set at high pressure setting and cook for 5 to 15 minutes, longer for more flavor After finished cooking, set the Instant Pot to “saute” setting again. Set at high heat for 10 minutes. Put the noodles in the broth. Take out chicken thigh and shred the chicken meat and put back into the broth. The sweet potato noodles in
this recipe take 5 minutes to cook. Other noodlers may take longer to cook. Serve the chicken noodle soup in a nice bowl. Enjoy!
Note: If you cook this recipe in an ordinary pot, increase the cooking time 4 times as long. The noodles you add in the last 5 minutes, if you are using the sweet potato noodles. Check out some of my other Chinese Chicken Noodle Soup recipes for cooking instructions.
